We love curry in our house so when we heard Ginsters, had created a Butter Chicken Bake we couldn’t wait to try it. With a recipe crafted by expert chefs, the Butter Chicken Bake is made with 100% British chicken cooked in a rich butter sauce with a blend of spices, coconut and lemon, encased in a light puff pastry.

It can be served hot or cold although we prefer it hot as the pastry crisps up nicely when warm. It’s not too spicy and is the perfect lunchtime treat.

Swaledale Butcher’s Meat for Comfort Cooking

If you’ve never heard of Swaledale Butchers then you are missing out on award-winning Yorkshire meats this autumn!  This week, the Swaledale team sent us a box of their finest meats to showcase their quality and see what comforting, autumnal meals we can make from their lovely ingredients.

Seeing as we are all looking for cost cutting measures but still need nutritious, fresh food as we go into winter, we were sent different cuts which could be cooked slowly and on low energy.  I don’t normally cook pork belly or ham hock, but I decided to have a go and learn some new recipes. Along with the pork belly and ham hock I chose sausages, pigs-in-blankets, pork mince and streaky bacon all arrived in an over-night delivery box straight from the Yorkshire based butcher. 

When I opened the parcel each product was individually wrapped in shrink plastic so you can store them in the fridge or put them straight in the freezer – which would be a shame as Swaledale pride themselves on never freezing their meat so you know you’re getting top quality fresh meat.

The Pork Belly is a favourite of mine in a restaurant so when I unwrapped the piece it was obvious that it would indeed feed four people! The skin was white and clear which is a good sign that the meat is fresh. If the skin and fat have a dull, creamy colour to them then it is probably a few weeks old.  The secret to pork belly is to cook it slowly so that the fat melts and isn’t tough at all so this went in the oven on 140C for 2 hours.  I rubbed salt into the skin too, to crisp it up. When it came to eating, the meat fell away from the bone and the fat was like soup it was so soft! It was just like the best pork belly from a restaurant, but at a fraction of the price and the high fat content means the pork is really filling.

Over the coming nights our family tried the different meats. The Coarse Pork Sausages are unlike anything you can buy at the supermarket. Flavoured with caraway seed, coriander seed and a whopping 93% meat content (supermarket sausages are typically 60-70%) then filled into 100% natural casing, they have none of the grizzle and instead create more flavour.  Perfect for dinner or for breakfast!

Speaking of breakfast, Swaledale’s Dry-Cured Smoked Streaky Bacon makes excellent eggs and bacon for breakfast.  Thick cut, the rashers can be fried easily and don’t shrink as much as supermarket bacon and crisps up nicely.  The whole house smelled of bacon after cooking just two rashers this weekend! The taste of the bacon was so authentic too – just like you remember as a child and none of the nitrates.

The minced pork, made with native breeds which are grass-fed is not something I usually cook with so again, I tried out a new recipe.  The high fat content of 25% makes it easy to cook and retains its flavour. I made teriyaki with this pork, which is normally made with beef mince but the pork held its flavour as being slightly lighter.  Like the other cuts of meat, there was ample in the portion size so I was able to freeze some.

The ham hock is a favourite of mine in the winter but I very rarely cook it. I slow cooked this on high for 3 hours, which is needed with the 1.25kg size of the meat and all the vegetables. With cloves added to the skin and a dash of herbs this was DELICIOUS and enough for 4 people!  The ham is also from a native breed and grass-fed but also good for freezing.

Lastly, my favourite… we eat these Pigs in Blankets all year round for their succulent flavour and just all round, feel good mood.  The Yorkshire-reared native breed sausages are wrapped in dry-cured, smoked streaky bacon to create that delicious texture and hearty flavour.  I cannot get enough of these and Swaledale’s taste so much better than what’s available in the shops.

Having never had a proper butcher’s box of meat delivered before, I didn’t know what I was missing out on.  Despite my trepidation about cost, this box cost £43 with £3.95 for delivery which is free for orders over £60.  The six different cuts of meat could easily feed 2 people for more than a week with leftovers for the freezer or next day, and as I found, the better quality meat didn’t shrink and left us feeling full up for longer because it wasn’t pumped full of preservatives and chemicals. Christmas this year is no longer going to be from the supermarket!
